Our Plattner honeys are honeys of different varieties and are analyzed in the laboratory to verify the purity and origin of the nectar source. But how exactly is varietal honey made?
Varietal honey is created when bees mainly collect nectar from one particular plant species — for example, lime, dandelion, or lavender. Bees are faithful to flowers: a bee chooses a flower species and sticks to it — visiting only that plant until no more nectar can be collected there.
Beekeepers use this behavior strategically: they place their bee colonies in suitable locations during the flowering period — such as a blooming lavender field or a chestnut grove. Once the flowering is over, the honey is harvested before other plants come into play.

This creates a natural product with genuine character — in taste, color, and scent, typical of the plant from which the nectar comes.
