Forest honey is made from the honeydew of various plant-sucking insects and the nectar of wildflowers and woodland blossoms. It has a strong, caramel-like flavor and ranges in color from dark brown to mocha. Whether as a spread on bread, in cooking for game or sweet-and-sour Asian dishes, or simply to sweeten tea – our forest honey is wonderfully versatile.
Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
