Fir honey is made from honeydew secreted by various forest insects. It has a strong, spicy-malty flavor and a fragrance of conifer wood and forest. Fir honey is less sweet compared to other types and is relatively liquid. Plattner Bienenhof fir honey is great on bread, works well in the kitchen for hearty dishes due to its robust flavor, and is considered a natural remedy in tea for respiratory infections. Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
