Heather honey comes from the tiny flowers of the heather plant and irresistibly recalls caramel, chamomile, or saffron. This often cloudy honey has a charming taste of caramel or licorice and tends to crystallize. Our heather honey is an excellent table honey, also pairs well with cheese, and doesn't fill you up as quickly as other honey varieties. Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
