Acacia honey is harvested from the large (often) white blossoms of the black locust (Robinia). Its mild, fine, sweet flavor resembles vanilla, and its scent is reminiscent of fresh beeswax and delicate flowers. Acacia honey is very popular with children, suitable as a sweetener, and remains liquid for a long time. Our Plattner Bienenhof acacia honey comes from pristine, untouched forests. Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
