Lavender honey comes from various lavender species and ranges in color from straw yellow to amber; once crystallized, it turns light beige to whitish. It has a wonderfully delicate and lasting flavor, reminiscent of almonds, figs, or passion fruit, and a herbal fragrance, similar to herbal tea. Our lavender honey is especially delicious in herbal tea or salad dressings. Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
