Sweet clover honey is made from the nectar of sweet clover, which thrives even on poor soils and in dry conditions. It has a brown color, tends to crystallize, and has a mild-sweet taste and fragrance, reminiscent of honey, flowers, or dates. Sweet clover honey is often used in the making of the sweet Italian "torrone." Our sweet clover honey is an excellent table honey and pairs well with a variety of dishes and occasions. Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
