South Tyrolean forest honey is harvested by beekeepers from the forests of South Tyrol, collected from the honeydew of various plant lice and the nectar of forest and meadow flowers. It has a strong, caramel-like flavor and a dark brown to mocha color. This honey is incredibly versatile – whether as a spread, to enhance game or sweet-and-sour Asian dishes, or to sweeten teas, our South Tyrolean forest honey always adds a special, natural touch. Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
