In chestnut honey, bees collect both nectar from the chestnut blossoms and honeydew from the surrounding forests of South Tyrol. This honey is characterized by its less sweet but more intense flavor, making it an excellent companion to aged cheeses or traditional dishes.
Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
