Eucalyptus honey comes from the widely spread eucalyptus trees in the Mediterranean region and has an unusual spicy-malty taste, reminiscent of caramel or cappuccino. The honey's fragrance is rather atypical, with notes of dried mushrooms, wet leaves, and licorice. Eucalyptus honey crystallizes quickly and changes color to a beige-gray. Like the essential oils of the plant, our eucalyptus honey is used for colds and respiratory infections. An interesting combination is also eucalyptus honey with aged cheese, such as sheep cheese or Parmigiano. Freshly harvested honey is liquid but may crystallize over time. This process is entirely natural, and crystallized honey can be returned to a liquid state by gently warming it in a water bath (up to 40 °C).
